Pina Colada-Pineapple Salad

About the Recipe

This fruit salad always reminds me of our holiday in Mauritius, lounging next to the pool and enjoying a pinacolada. Everytime I miss those sun-filled days this recipe comes out and has even featured as a dessert at weekend braai's to Christmas.

It pairs beautifully with ice cream and even if you leave the alcohol out (to make it kid friendly) it still has that pinacolada taste.

Ingredients

  • 1 Fresh Pineapple or 220g of Canned Pineapple

  • 1 Fresh Mango

  • 1/2 Papaya

  • 60ml Coconut Cream

  • 60ml Pineapple Juice (or the juice of the canned pineapple)

  • 30ml White Rum*(Optional)

  • Shredded Coconut to garnish

Preparation

  1. Trim the pineapple ends. Cut the pineapple in quaters and remove the skin. Slice the pineapple quaters in thin slices. If using canned pinapple, drain the pineapple but keep the syrup.

  2. Peel and slice the mango.

  3. Peel the papaya, remove the pips and cut into cubes.

  4. Add all the fruit to a bowl and mix.

  5. Mix the coconut cream, pineapple juice and rum*, pour over the fruit and place in the fridge to chill.

  6. Sprinkle the shredded coconut just before serving. To garnish you can add a few sprigs of mint or place the pineapple crown in the middel of the bowl.
